I love challenging myself to recreating dishes that I love to eat at restaurants because it's a great way to test my cooking skills, but also saves my family money when I can make the same meals at home, but even better.

Lets jump right into the basics of cooking rice:

  • It's always a 2 cups water to 1 cup of rice ratio.

  • Always season your water with salt, pepper, and a tablespoon of butter.

  • Bring water to a boil, add rice, then when surface bubbles appear on the top of the rice (about 10 minutes) reduce heat to medium low and cover with a lid cooking for an additional 35 minutes.

Now to make authentic Mexican Rice like the restaurant effortlessly you are going to add these simple ingredients that deliver a flavorful rice that pairs so nicely with a variety of Mexican flavors like lime, cilantro, and avocado.

Make sure to add these ingredients before adding your rice to prevent the rice from becoming mushy.

  1. Add 3 tablespoons of Prego Meat sauce to your water before boiling

  2. Add 1 teaspoon of dried Oregano

  3. Add 1 cup of frozen mixed vegetables

You can pair this rice with grilled chicken, quesadillas, pork chops, buttered shrimp, and it goes perfectly with shredded lettuce topped with sour cream and salsa.
