Step By Step How To Cook Chinese Stir Fried Rice with Eggs
Step 1: Cook The Rice
Cook rice as you normally would by bringing 2 cups of water to a boil for 1 cup of rice, which will give you about 6 servings.
Add a teaspoon of salt, tablespoon of butter, a dash of pepper, and a splash of rice wine vinegar and fish sauce to the water before adding rice.
Step 2: Cook Peas and Carrots
Grab a frozen bag of peas and carrots to cook in a separate pan by adding a splash of water and steaming the vegetables until softened then drain and remove setting to the side.
Using this same pan it is time to build flavors!
Step 3: Build Flavors
Add 1/4 of a sweet onion diced into pan and sauté in a teaspoon of butter until softened.
Then add sesame oil, soy sauce, oyster sauce or Hoisin, white pepper, garlic, and ginger powder.
Shaoxing cooking wine can give you even more flavor, but it is expensive at around $6 a bottle, so lately I've just been skipping it.
Once all ingredients are combined mix in about a tablespoon of cornstarch (mixed in cool water) until you create a thick sauce.
Step 4: Mix All Your Ingredients Together
In the large pan with the sauce add your rice and vegetables mixing the sauce you created throughout by gently tossing the rice.
Taste and add more seasoning as needed.
If you want a richer color or flavor adding more sesame, soy sauce, and oyster sauce will be your key ingredients just taste as you add to make sure it is to your liking.
Sprinkle chopped green onions over top for a boost of color and fresh flavor.
Step 5: Microwave The Eggs
I like to have a vibrant yellow egg to add to my rice so I will scramble 2-3 eggs in a microwavable container sprayed with pam cooking spray then microwave for about 1-2 minutes.
It is important not to overcook the eggs because it will give them a rubbery texture.
Once cooked give the eggs a rough chop and add to your rice.
