Easy Spanish Chicken Recipe With Thighs


This has to be one of my favorite Spanish chicken recipes because it delivers on flavor, is easy to make, and requires just a handful of staple ingredients plus everything is made in just one pot and that is always a bonus.


Ingredients for Chicken Thigh Recipe:


4 chicken thighs

1 beefsteak tomato

1/2 white onion

salt

pepper

garlic

paprika

olive oil

breadcrumbs


  1. Season chicken thighs in a Spanish blend of seasonings evenly like salt, pepper, garlic, and paprika then drizzle with olive oil

  2. Sautee chopped tomatoes and onions add a sprinkle of salt, pepper, and garlic to the pot along with a drizzle of oil and a splash of water to prevent browning and continue to cook until softened.

  3. Remove cooked tomatoes and onions to set aside.

  4. Then add chicken thighs skin side down and cook over medium heat until browned about 2-3 minutes then flip and brown for an additional 3 minutes.

  5. Add sautéed tomatoes and onions back into the pan adding water until chicken is halfway submerged.

  6. Continue cooking on a medium low heat adding 1 cup of original breadcrumbs and mixing thoroughly until sauce is thickened then spoon sauce over chicken thighs continuing to cook covered over medium low for an additional 25-30 minutes until meat temp is 165 degree F.
