If you want to be able to harvest fresh food from your backyard quickly you have to try these fast growing vegetables that are perfect for cool season planting.


These vegetables and herbs are great for beginners because they are easy to germinate and quick to harvest making them a great way to get started learning how to grow you own food from your backyard.

Microgreens


Microgreens you can harvest in just two weeks making this our top quick growing crop.


The beauty of microgreens is that you can grow them inside and they pack a nutritional punch and are super quick to grow.

Radishes


Radishes are another great choice to add to your kitchen garden for a quick harvest in under 30 days.


They thrive in cooler soil, so planting them in early Spring or late Summer as a Fall crop can enhance their flavor.


Their crunchy texture and peppery kick make them a fantastic addition to salads, stir-fries, or even as a snack on their own.


To grow radishes successfully directly sow into well draining soil and provide plenty of sunlight.


They require minimal care just a light watering to keep the soil damp.


Remember to thin them out as they grow because overcrowded seeds can lead to smaller and less tasty roots.

Loose Leaf Lettuce


Who doesn’t enjoy a crisp fresh salad?


Leaf lettuce is one of my garden favorites and can be harvested in as little as 30 days making it an ideal vegetable to grow in your kitchen garden.


You can sow the seeds directly into the garden or use containers, which makes growing them quite accessible to anyone even in small spaces.


And let's face it how quick does the lettuce you purchase from the store last?


Where was it shipped from?


Growing your own lettuce is a simple way to make a big difference in your grocery spending habits.


Loose leaf lettuces are quick to germinate and you can continually harvest from them by simply removing just the outer leaves as it grows.


I like to do a variety of loose leaf lettuces my favorite being Bibb lettuce because its perfect for topping sandwiches and making fresh salads.


I also love Ruby Red it has such a beautiful color and good crunch, so you'll always see this one in my kitchen garden.

Spinach


Spinach is another excellent choice for fast growing greens and is usually ready for harvest in 30 days perfect for salads, smoothies, or stir-fries.


Spinach is a nutritional ingredient with vitamins A, C, and K making it a great staple in any kitchen garden.


To grow spinach focus on well draining fertile soil and ensure it receives adequate sunlight.


I like to create a seed blend incorporating my favorite loose leaf lettuces then a few spinach seeds to create a good variety perfect for creating a mixed salad.


A helpful tip is to regularly pick the outer leaves because this encourages the plant to grow more leaves and extends your harvest.

Kale


Kale is one of my favorite plants to grow in the garden because it is super resilient, germinates easily , and the best part is being able to harvest time and again.


Kale is very resilient and can be over wintered in some areas making it a great crop to grow, especially if your new to gardening.


You can also directly sow these seeds into the soil and within 30 days you can begin harvesting tender baby leaves.


Keep the soil consistently moist and remove outer leaves as you harvest to encourage continuous growth.

Swish Chard


Swish chard has to make the list of quick vegetables to grow in the garden another great staple to have in your kitchen garden.


These plants produce a large seed that can be directly planted into the garden with quick germination.


Often times, the key to knowing how well a seed will germinate is size and this is one variety of greens that produces a large seed.


With a pick come again harvest method you can enjoy this green throughout the season in fresh salads or sautéed.

If you know me you know I absolutely love growing green scallions.


It is so rewarding being able to go out to the garden and pick fresh scallions to add to my favorite dishes like homemade salsa, potato salad, and soup.
